What You Are Acknowledging

By completing this topic, you confirm that you have read and understood the following:

  • L05 — Food Safety Training Program: You understand the importance of temperature control, FIFO, labeling, and preventing cross-contamination
  • L07 — Dough Handling & Proofing: You know how to receive, store, proof, and handle dough correctly
  • L08 — Food Storage & Cross-Contamination: You know the correct storage order in the walk-in and how to prevent cross-contamination
  • L22 — Standards of Operations: You understand portion adherence, order accuracy, station ownership, and the cleaning chart
  • L06 — The 3-Compartment Sink: You can perform the wash-rinse-sanitize process correctly

The Standard You Are Upholding

Cassano’s has been making pizza in this community since 1953. Every item that goes out our door either reinforces that reputation or damages it.

The product quality standard is not a range or a guideline — it is a fixed target:

  • Correct portions, every time
  • Built to spec, every time
  • Served at the right temperature, every time
  • With clean hands and sanitized surfaces, every time

“Close enough” is not the standard. The standard is the standard.

If You Are Ever Unsure

If you are ever unsure whether a product meets the quality standard:

  1. Do not send it out
  2. Tell your manager
  3. Remake it

The cost of one remade pizza is far less than the cost of one disappointed customer who does not come back.
